We couldn’t be happier to let you know that Brasserie on the Corner, along with our adjoining Blakes Bar Galway will reopen Monday evening, 29th June 2020! Serving our lunch, pre-theatre and a la carte menus daily.
And we’ve been busy doing some renovations in the restaurant while you’ve been away, so you’ll see some exciting changes when you come visit us! Keep an eye out as we reveal some sneak peeks in the coming days.Rest assured we’ll be adhering to Government guidelines for both our team and you, our customer, to ensure the same comfortable dining experience and enjoyable ambiance, with all the necessary precautions in place.
As a result, things will be a little different in Brasserie on the Corner but with a few simple steps to follow, we’ll ensure you enjoy that award-winning experience we always pride ourselves on. So you can relax and spend some well-needed time with family, friends or colleagues.As we will be operating at reduced capacity, we recommend booking early to avoid disappointment. 👩‍🍳 RECIPE 👨‍🍳 STICKY TOFFEE PUDDI

👩‍🍳 RECIPE 👨‍🍳
STICKY TOFFEE PUDDINGIngredients:
750g Dates
525ml Water
300g Butte
450g Brown Sugar
6 Eggs
90g Treacle
300ml Milk
525g Plain Flour
42g Baking Powder
21g Bread Soda
(Makes 24 Portions)
Method:
Ø Beat together the butter and brown sugar
Ø Add the beaten eggs one by one while beating at a slow speed
Ø Add the milk and continue beating
Ø Combine the flour, baking powder, bread soda and add to the mixture
Ø Soak the dates in hot water and blitz into a paste
Ø Add the dates and treacle to the mixture and pour into baking tray
Ø Cook at 170oC for 25 mins and 165oC for 10-15 mins
Toffee Sauce Ingredients:
200g Butter
600g Brown Sugar
800ml Cream
60g Treacle
(Makes 1.5 Liters)
Method:
Ø Combine the sugar, butter and 400ml cream in a sauce pan and bring to the boil.
Ø Take off the heat and fold in the rest of the cream and treacle

~ RECIPE ~
GUINNESS & TREACE BREADIngredients:
110g plain flour
360g wholemeal flour
50g porridge
4g salt
7.5g dried seaweed
15g bread soda
44g brown sugar
5g baking powder
80ml treacle
250ml buttermilk
44ml oil
0.3 pint of Guinness
1 eggs
Method:
· Mix all dry ingredients together very well (except porridge)
· Then mix wet ingredients including eggs together until well combined
· Finally mix dry and wet ingredients together
· Sprinkle the porridge on top as a garnish
· Bake at 165C for 45 minutes in a loaf trayServe:
Enjoy as you wish.. lathered in butter, savour with a fresh salad or delicious as an open sandwich.
